Amazon.com Review: Calphalon Commercial hard-anodized pans are made for the more serious cook who is looking for kitchenware built to last a lifetime. This large-size, 12-quart stockpot is good for soup, stews, and pasta, and its heavy-gauge aluminum construction also stands up to deep frying. The looped handles are easy to grip and stay cooler than you might expect, thanks to V-shaped splits where they meet the pan, but it's still a good idea to keep hot pads nearby. The nonporous and nonreactive hard-anodized surface resists sticking and doesn't affect the flavor or color of food. It's also tough enough to handle stainless-steel utensils and vigorous whisking. Unlike pans with plastic or wood handles, the extremely sturdy all-metal construction provides you the flexibility to take the pan to the oven or broiler. First, the only two negatives: 1) It does seem to scratch more easily than my Circulon Hard-Anodized Non-Stick Hi-Low System pots -- a casual encounter with a faucet will disclose a fine, thin streak of aluminum; 2) I used the pot two or three times before obtaining Calphalon's Dormond cleaner and wound up with black-on-black watermark type stains on the inside of the bottom and the inside of the lid. The price was great and it works like you would expect a product from Calphalon would work. We use it so much and like it so well, that we have purchased one of these pans for our daughter to celebrate her divorce. Rating: - I am very happy with my new stockpotI had a large stockpot, but I misplaced it. I found it after I bought the Calphalon Commercial Hard Anodized 12-Quart Stockpot. But I am very happy that I bought this stockpot even though I end up having two now. I have been using the new one since. It heats up fast and even. I also like its look. I will give away my old one and continue to enjoy my new stockpot. :-) Rating: - Stuff burned into the bottom after first time useThought I finally had the pertect pot to cook double batches of jelly. After the first time, jelly is burned into the bottom and won't come off. I will have to use a brillo pad to get it off, even after soaking the pot in water for 2 days. Not easy to clean. Rating: - Love my calphalonI purchased the calphalon commercial after purchasing the infused hard anodized cookware. I really enjoy cooking with the pot. If you follow the proper cooking tips from calphalon, nothing sticks. It cooks great and food cooks evenly. The only problem that I see is the top fits but not like the other calphalon cookware that I purchased.
