Small amounts of fluid would remain and end up on your food, resulting in a distinct flavor. Not exactly what you want to be serving to your family or important guests. My family has 4 weber grills, and at some parties, they've all been going at once. He tried too much paper the first time, which made it smoke a lot, but the next time, less paper, and whaalaa, a quick and easy batch of coals in half the time, also like the big handle. The 'old' ones were lighter gauge than the current product and they lasted about three years. The latest one is heavier gauge and perhaps it will last longer. I recommend this item.
