Amazon.com Review: Moderately priced companions to Wüsthof's renowned Classic forged knives, Gourmet Series knives have the same full-tang, three-rivet, virtually indestructible poly handles as Classic knives. Instead of being forged, however, Gourmet Series blades are cut from steel sheets by precision lasers. That means they have no bolsters. But it also means they are perfectly shaped and fit their handles seamlessly. And the blades' high-carbon stainless steel is identical to that of Wüsthof's premium knives, only thinner. The four steak knives in this set have straight edges for neatly slicing steaks, chops, and roasts into bite-sized pieces at the table. At 4-3/4 inches, they're long enough to handle the biggest porterhouse yet are nicely balanced and light in the hand. ![]() Rating: - You get what you pay for (and I mean that as a compliment)I essentially agree with what other reviewers have written (except that Mn is molybdenum- Mn is manganese, Mo is molybdenum). Are they of the superior craftsmanship of the Wusthof Classic line? No, they are not. But at a fraction of the price of Classic, you already knew they wouldn't be. The plastic handle and thinner steel do feel a bit on the cheap size when holding the knife, but they look great alongside the rest of our Wusthof cutlery (which is why my fiance and I bought them). I checked my knives and then contacted a friend of mine that is into knives. He said that Molybdenum is put into the steel for forging purposes only thus it has no effect on the sharpness or finish. Read More Rating: - Wusthof Gourmet Series KnivesJust received these knives and they seem to be a fine set of steak knives. However, I noticed that these gourmet series (with the exception of the 8" chef's knife), use different steel than their more expensive classic series. Specifically, the classic series uses "X50CrMn15" material, whereas these gourmet series uses "X46Cr13". The major difference being that X46Cr13 contains less carbon (0.5% vs. 0.46%) and that it does not contain Mn (molybdenum), which is needed for knives to be totally dishwasher ... Read More |
