This is so heat is stored up and redistributed evenly. The resulting blast of heat from the Old Stone Oven rectangular pizza stone gives bread and pizza a nice chewy crust. The rustic French tarts called galettes are also well suited to a baking stone. To use the stone, place it in a cold oven and preheat to 500 degrees for pizza, or according to the recipe for bread or galettes. The stone is made of the same material that lines blast furnaces and kilns, so it can handle ultra-high temperatures. Wait until the baking stone is entirely cooled before attempting to clean it. Let it dry completely before using again. Some discoloration will occur over time; this is natural and will not affect baking. Using baking parchment may help delay that discoloration. Do not bake cookies, turnovers or other high-fat items on the stone; the stone would absorb the fat and proceed to produce smoke and bad odors. What makes the best pizzeria pies much better than home baked ones is the crispy underside and tender upper side to the dough. To do this requires a quick bake in a very hot oven and a mean to draw the moisture from the bottom of the crust. We accomplish this by baking in our outside closed BBQ and the baking stone. Customer service was good when I called. New stone is being sent 2-day w/o charge. I was told not to send the broken stone back, however I am saving the box, rubble, and shipping labels just in case. After reading so many "broken" reviews, I had expected it to be a gamble. I tried to explain to the customer service rep about the lack of proper packaging. We'll see the next shipment. Will update when the 2nd stone is received. Told them it was a problem with how they package the item. Spent the hassle to return it and wait for a replacement. 2nd one packaged the same and guess what -- shattered!
