I took the advice of other reviewers and let it heat up for 10 minutes. The heating element is located around the outside (engineering design flaw) and so there can be cool spots in the center if you don't get it really hot. I am tickled pink with this product!!! This is because the heating coil wraps around underneath the thin aluminum griddle just one circumference for such a large surface area.
